I was recently gifted with a large houseplant that I was told was a cane corn, however I'm not finding it in any of my plant books.
It is about 4 feet tall, a single woody trunk that appears to have been cut and sealed at the top. It has several shoots near the top of the trunk that leaf out with broad flat leaves that are varigated, light and dark green. Anyone have a latin name or any other common names for this guy? Any help would be appreciated.

I have one and besides the name that Susan gave you, it is also known as a "mass cane" and most commonly known as a "corn plant".
