Do I cut back these bushes for the winter? How far? When? And is there anything special I can do to the soil before winter?

Don't prune the blueberries until spring, I do not mulch my blueberries but they like acidic soil. If you have pine trees in your yard, rake the pine needles and lay them around the base of the blueberries - makes a nice mulch and they'll get acid from the pine needles!
