Bromeliad Options

My Bromeliad flower died, and the plant has three new shoots. I have read earlier postings with mention of both things happening, and that the new shoots will replace the original which is the very large central part of the plant. What I don't understand is whether I should remove the center of the plant, leaving only the new shoots. I have cut the flower out, but the central leaves are still green. If anyone knows what I'm supposed to do, please send instructions! All help appreciated!

I recently purchased a "Neoregelia Fireball" Bromeliad from a grower in Louisiana. It's absolutely beautiful, really healthy. The grower says he waters his Bromeliads by merely sitting them in water once a week, which is contrary to what I've read and heard. Any suggestions?
