This vegetable has a HUGE stock and is very tall and sturdy. The leaves are massive. The flower is white and huge and opens during the day, but closes closer to evening. When the flower falls off, there is a cactus, like (artichoke shape, but very soft) remaining that continues to grow and will eventually grow into some type of vegetable?
