Any tips on how to care for office plants? How to transplant them to new pots? How to deal with plants with yellowing leaves, or leaves that are falling off? Do I need to fertilize?

That question is a little general. For starters, do you know what kind of plants you're dealing with? Different plants require different care. If you aren't sure, you might put up a picture of them so someone can identify them for you and help you out.
